Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 1/2 cups unsalted butter, softened
  • 1 tsp vanilla extract

Instructions

  1. In a heatproof bowl, combine the egg whites and sugar. Set the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

  2. Whisk the egg whites and sugar constantly until the sugar has dissolved and the mixture is hot to the touch, about 3-4 minutes.

  3. Remove the bowl from the heat and transfer the mixture to a stand mixer fitted with the whisk attachment.

  4. Whip the mixture on medium-high speed until stiff peaks form and the mixture is cooled to room temperature, about 8-10 minutes.

  5. Reduce the speed to medium and gradually add in the softened butter, a few tablespoons at a time. Continue whipping until the butter is fully incorporated and the frosting is smooth and fluffy.

  6. Mix in the vanilla extract until well combined.

  7. Use immediately to frost cakes or pastries, or store in an airtight container in the refrigerator for up to one week.
