How To Make Zucchini Cookies

Ingredients
- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup chopped walnuts (optional)
Instructions

Preheat the oven to 350°F and line a baking sheet with parchment paper.

In a large bowl, combine the grated zucchini, flour, sugars, butter, vanilla extract, baking powder, salt, cinnamon, and nutmeg. Mix well.

Fold in the chopped walnuts, if desired.

Drop rounded tablespoons of the cookie dough onto the prepared baking sheet.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
