Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  2. Mix in the vanilla extract until well combined.

  3. Gradually add in the flour and salt, mixing until the dough comes together.

  4. Divide the dough into 2 equal portions and shape each portion into a log, about 2 inches in diameter.

  5. Wrap the logs in plastic wrap and refrigerate for at least 1 hour.

  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  7. Remove the dough from the refrigerator and slice each log into 1/4 inch thick rounds.

  8. Place the rounds onto the prepared baking sheet, spacing them about 1 inch apart.

  9. Bake for 10-12 minutes, or until the edges are golden brown.

  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
