How To Make Little Almond Cookies

  • 1 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 egg white
  • Slivered almonds, for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine almond flour, granulated sugar, almond extract, vanilla extract, and salt.

  3. In a separate bowl, whisk the egg white until frothy.

  4. Gradually add the frothy egg white to the dry ingredients, mixing until a sticky dough forms.

  5. Scoop spoonfuls of the dough onto the prepared baking sheet, leaving space in between each cookie.

  6. If desired, gently press a slivered almond onto the top of each cookie.

  7. Bake for 12-15 minutes, or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
