How To Make Gin & Tonic Cheesecake

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 200g granulated sugar
  • 4 tbsp gin
  • Juice of 1 lime
  • 250ml double cream
  • 1 tsp tonic water
  • Lime slices, for garnish

Instructions

  1. In a bowl, mix the crushed biscuits with melted butter. Press the mixture into the base of a greased 8-inch springform pan. Chill in the refrigerator for 15 minutes.

  2. In a separate bowl, beat the cream cheese and sugar until smooth. Add the gin, lime juice, and tonic water, and mix until well combined.

  3. In another bowl, whip the double cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.

  4. Pour the cheesecake mixture over the chilled biscuit base and smooth the top with a spatula. Refrigerate for at least 4 hours or overnight to set.

  5. Garnish with lime slices before serving.
