Ingredients

  • 1 orange, zest and juice
  • 150g raspberries
  • 150g butter, softened
  • 150g sugar
  • 2 eggs
  • 150g self-raising flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a cake tin.

  2. In a bowl, mix together the butter and sugar until creamy.

  3. Beat in the eggs, one at a time, followed by the orange zest and juice.

  4. In a separate bowl, mix the flour and baking powder together. Gradually add this to the wet ingredients and mix until well combined.

  5. Gently fold in the raspberries, being careful not to crush them.

  6. Pour the batter into the prepared cake tin and smooth the top.

  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

  9. Once cooled, dust with powdered sugar and serve.
