Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 2 cups cooked brown rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp Trader Joe’s Sriracha Sauce
  • Salt and pepper, to taste
  • Green onions, chopped, for garnish

Instructions

  1. In a large bowl, mix together olive oil, soy sauce, honey, sriracha sauce, salt, and pepper.
  2. Add shrimp to the bowl and toss to coat evenly.
  3. Let shrimp marinate for 10-15 minutes.
  4. In a large skillet over medium-high heat, sauté red and green peppers and onion until tender.
  5. Add marinated shrimp to the pan and cook for 3-4 minutes, or until pink and cooked through.
  6. Divide cooked rice into 4 bowls.
  7. Top each bowl with sautéed veggies and shrimp.
  8. Garnish with chopped green onions, if desired.
