Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup low-fat Caesar dressing
  • 1/4 cup croutons (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. Season the chicken breasts with salt and pepper.

  3. Grill the chicken for about 6-8 minutes per side, or until cooked through. Let cool for 5 minutes, then slice into thin strips.

  4. In a large bowl, combine the romaine lettuce, cherry tomatoes, and Parmesan cheese.

  5. Add the grilled chicken strips to the bowl.
