Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 stalks lemongrass, thinly sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red chili, sliced
  • 1 cup coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pan, heat some oil over medium heat. Add the chopped onions, minced garlic, grated ginger, and sliced lemongrass. Cook until the onions are translucent and the lemongrass releases its fragrance.

  2. Push the aromatics to one side of the pan and add the chicken breasts. Cook until they are browned on both sides.

  3. In a bowl, mix together the coconut milk, fish sauce, soy sauce, and brown sugar. Pour this mixture over the chicken in the pan.

  4. Reduce the heat to low and let the chicken simmer in the coconut mixture for about 15-20 minutes, or until the chicken is cooked through and tender.

  5. Garnish with fresh cilantro and serve with lime wedges on the side.
