  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pizza sauce
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat a large non-stick skillet over medium heat.

  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper.

  3. Spray the skillet with cooking spray and pour in the egg mixture.

  4. Cook for 2-3 minutes or until the edges start to set.

  5. Sprinkle the pepperoni, bell peppers, onions, and both cheeses evenly over the omelette.

  6. Drizzle pizza sauce on top.

  7. Cover the skillet with a lid and cook for an additional 4-5 minutes or until the eggs are fully set and the cheese is melted.

  8. Remove from heat and let it cool for a minute.

  9. Cut into quarters and serve hot.
