  • 2 cups shredded zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.

  2. In a bowl, combine the shredded zucchini, flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.

  3. In a separate large bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until well combined.

  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  5. Fold in the chocolate chips.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
