How To Make Rhubarb & Coconut Ripples

Ingredients
- 4 stalks of rhubarb, chopped
- 1/2 cup of sugar
- 1/4 cup of water
- 1 cup of coconut milk
- 1/4 cup of unsweetened shredded coconut
- 1 tsp of vanilla extract
Instructions

In a saucepan, combine the rhubarb, sugar, and water. Cook over medium heat until the rhubarb is tender and the mixture has thickened, about 10 minutes. Remove from heat and let it cool.

In a separate bowl, whisk together the coconut milk, shredded coconut, and vanilla extract.

Pour the coconut mixture into a freezer-safe container and freeze for about 20 minutes, or until it begins to set around the edges.

Remove from the freezer and swirl in the rhubarb mixture with a spoon. Return to the freezer and freeze for another 2-3 hours, or until completely firm.

Serve the rhubarb & coconut ripples in bowls or cones and enjoy!
