Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cups of water
  • 1/4 cup of salt
  • 1/4 cup of sugar
  • 2 cloves of garlic, minced
  • 1 tablespoon of black peppercorns
  • 1 sprig of fresh rosemary
  • 1 lemon, sliced

Instructions

  1. In a large pot, combine water, salt, sugar, garlic, peppercorns, rosemary, and lemon slices. Stir until the salt and sugar dissolve.

  2. Place the chicken breasts in a resealable plastic bag and pour the brine mixture over them. Seal the bag, removing as much air as possible.

  3. Refrigerate the bag for at least 2 hours, or overnight for optimal flavor.

  4. Preheat the grill or grill pan over medium-high heat.

  5. Remove the chicken breasts from the brine and pat them dry with paper towels.

  6. Grill the chicken for about 6-8 minutes per side or until cooked through, with an internal temperature of 165°F (74°C).

  7. Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving.
