How To Make Brined Roast Chicken

Ingredients
- 1 whole chicken (about 4 pounds)
- 4 cups water
- 1/4 cup salt
- 1/4 cup sugar
- 1 tablespoon black peppercorns
- 2 cloves garlic, crushed
- 2 sprigs fresh rosemary
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions

In a large pot, combine the water, salt, sugar, peppercorns, garlic, and rosemary. Stir until the salt and sugar dissolve.

Remove the giblets from the chicken and place the chicken in the brine mixture. Make sure the chicken is fully submerged. Place in the refrigerator and let it brine for at least 4 hours, or overnight if possible.

Preheat the oven to 425°F (220°C).

Remove the chicken from the brine and pat it dry. Discard the brine.

Rub the olive oil all over the chicken, including under the skin. Season the chicken with salt and pepper.

Place the chicken on a roasting rack in a roasting pan. Roast for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving.
