  • 1 lb wild mushrooms, cleaned and sliced
  • 1 lb baby potatoes, halved
  • 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large baking dish, combine the mushrooms, potatoes, garlic, olive oil, thyme, salt, and pepper. Toss well to coat.

  3. Roast in the preheated oven for about 40-45 minutes, or until the mushrooms and potatoes are golden and crispy.

  4. Remove from the oven and let it cool for a few minutes before serving.
