How To Make Brussels Sprout Soup

A hearty and healthy soup that is perfect for a chilly day!

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until softened.

  2. Add Brussels sprouts and continue to cook for a few more minutes.

  3. Pour in broth and bring to a boil. Reduce heat and let simmer for 20-25 minutes or until vegetables are tender.

  4. Remove from heat and use an immersion blender to puree until smooth.

  5. Stir in milk or cream and season with salt and pepper to taste. Serve hot.
