How To Make Roast Salmon with Peas, Potatoes & Bacon

Ingredients
- 4 salmon fillets (6 oz each)
- 2 cups frozen peas
- 4 medium potatoes, peeled and diced
- 6 slices bacon, cooked and crumbled
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the salmon fillets on a baking sheet and drizzle with olive oil. Season with salt and pepper.

In a separate baking dish, toss the diced potatoes with olive oil, salt, and pepper. Spread them out in a single layer.

Place both the salmon and potatoes in the oven and roast for 20-25 minutes, or until the salmon is cooked through and the potatoes are crispy.

Meanwhile, cook the peas according to package instructions. Drain well.

Remove the salmon and potatoes from the oven. Serve the roasted salmon on top of the crispy potatoes, and sprinkle with cooked bacon and peas.
