How To Make Roast Chicken Vinaigrette

Ingredients
- 1 whole chicken (about 4 lbs)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, dried thyme, dried rosemary, salt, and black pepper to make the vinaigrette marinade.

Place the chicken in a roasting pan and pour the vinaigrette marinade over it, making sure to coat the entire chicken.

Roast the chicken in the preheated oven for about 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.

Baste the chicken with the marinade every 30 minutes while roasting.

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
