Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

  2. Trim the ends of the zucchinis and slice them lengthwise into thin strips using a mandoline or a sharp knife.

  3. In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper. Mix well.

  4. Spread a thin layer of marinara sauce on the bottom of the baking dish.

  5. Take a zucchini strip and spread a spoonful of the cheese mixture along one end. Roll up the zucchini strip and place it seam side down in the baking dish. Repeat with remaining zucchini strips and cheese mixture.

  6. Pour the remaining marinara sauce over the zucchini rolls.

  7. Cover the baking dish with foil and bake for 30 minutes.

  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  9. Serve the zucchini lasagna rolls hot and garnish with fresh basil and Parmesan cheese, if desired.
