Ingredients

  • 1 1/2 cups of digestive biscuit crumbs
  • 1/4 cup of melted butter
  • 4 passion fruits
  • 2 limes
  • 1 cup of condensed milk
  • 3 egg yolks
  • 1 tsp of vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. Mix the digestive biscuit crumbs and melted butter in a bowl until well combined. Press the mixture into the bottom of a tart pan.

  3. Bake the crust for 10 minutes, then remove from the oven and set aside.

  4. Cut the passion fruits in half and scoop out the pulp into a small saucepan. Add the juice of the limes, condensed milk, egg yolks, and vanilla extract. Whisk until well combined.

  5. Cook the passion fruit mixture over low heat, stirring constantly, until it thickens and coats the back of a spoon. This will take about 10-15 minutes.

  6. Pour the caramelized passion fruit mixture onto the crust and spread it evenly.

  7. Bake the tart for 20 minutes, or until the filling is set and slightly golden.

  8. Remove from the oven and let it cool completely before serving.
