Ingredients

  • 1 9-inch pre-made pie crust
  • 1 cup fresh grapefruit juice
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1/4 cup unsalted butter, melted
  • 1 cup sparkling water
  • 1 tablespoon grapefruit zest
  • Whipped cream, for topping (optional)
  • Grapefruit slices, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Place the pre-made pie crust in a 9-inch pie dish and set aside.

  3. In a medium saucepan, whisk together the grapefruit juice, sugar, cornstarch, salt, and egg yolks.

  4. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

  5. Remove the saucepan from the heat and stir in the melted butter until smooth.

  6. Stir in the sparkling water and grapefruit zest until well combined.

  7. Pour the filling into the prepared pie crust and smooth the top with a spatula.

  8. Bake for 25-30 minutes, or until the filling is set and the crust is golden brown.

  9. Remove from the oven and let cool completely.

  10. Optional: Top with whipped cream and garnish with grapefruit slices before serving.
