How To Make Sparkling Grapefruit Pie

Ingredients
- 1 9-inch pre-made pie crust
- 1 cup fresh grapefruit juice
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 egg yolks
- 1/4 cup unsalted butter, melted
- 1 cup sparkling water
- 1 tablespoon grapefruit zest
- Whipped cream, for topping (optional)
- Grapefruit slices, for garnish (optional)
Instructions

Preheat your oven to 375°F (190°C).

Place the pre-made pie crust in a 9-inch pie dish and set aside.

In a medium saucepan, whisk together the grapefruit juice, sugar, cornstarch, salt, and egg yolks.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

Remove the saucepan from the heat and stir in the melted butter until smooth.

Stir in the sparkling water and grapefruit zest until well combined.
