How To Make Smoothie Jellies with Ice Cream

Jelly desserts don’t always have to mean ordinary gelatin dishes in cups. With our tasty jelly recipes, a jelly dessert will make you become the talk of the town before you know it.

Preparation: 20 minutes
Cooking: 4 hours (including chilling time)
Total: 4 hours 20 minutes

Serves:

Ingredients

  • 2 cups of fruit juice (e.g. orange, pineapple, or strawberry)
  • 2 tbsp of gelatin powder
  • 2 cups of mixed fruits, diced (e.g. berries, mango, kiwi)
  • 4 scoops of ice cream, any flavor
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. In a small saucepan, heat the fruit juice over medium heat until hot but not boiling.

  2. Sprinkle gelatin powder over the hot juice and whisk until completely dissolved.

  3. Pour the mixture into individual serving glasses or silicone molds, filling them halfway.

  4. Add a spoonful of diced fruits into each glass or mold, then top with more juice mixture.

  5. Refrigerate for at least 4 hours or until set.

  6. To serve, unmold the jelly by gently pulling the edges away from the sides of the mold.

  7. Place a scoop of ice cream on top of each jelly and garnish with fresh mint leaves, if desired.
