  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the melted butter, brown sugar, granulated sugar, and vanilla extract until well combined.

  3. In a separate bowl, combine the rolled oats, all-purpose flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them apart.

  6. Flatten each portion slightly with the back of a fork.

  7. Bake for 12 minutes, or until the edges are golden brown.

  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
