  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.

  2. In a large bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.

  5. If using walnuts, fold them into the batter.

  6. Pour the batter into the greased baking dish and spread evenly.

  7. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the pumpkin bars to cool before cutting into squares.

  9. Serve and enjoy!
