Ingredients

  • 1 whole chicken, chopped into pieces
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, peeled and quartered
  • 4 cloves of garlic, crushed
  • 1 bay leaf
  • 1 teaspoon peppercorns
  • 1 tablespoon salt
  • 8 cups water

Instructions

  1. In a large pot, combine the chicken, carrots, celery, onion, garlic, bay leaf, peppercorns, salt, and water.

  2. Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer uncovered for 3 hours.

  3. Skim off any impurities that float to the surface during the cooking process.

  4. After 3 hours, remove the pot from the heat and strain the stock through a fine-mesh sieve into a clean container.

  5. Discard the solids and let the stock cool completely before refrigerating or using in recipes.
