Ingredients

  • 4 egg yolks
  • 1/4 cup of erythritol
  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of erythritol (for caramelizing)

Instructions

  1. Preheat the oven to 325°F (163°C).

  2. In a bowl, whisk together the egg yolks and erythritol until well combined.

  3. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Do not boil.

  4. Slowly pour the hot cream into the egg yolk mixture, whisking constantly.

  5. Stir in the vanilla extract.

  6. Place four ramekins in a baking dish and divide the custard mixture evenly among them.

  7. Carefully pour enough hot water into the baking dish to come halfway up the sides of the ramekins.

  8. Bake for 45 minutes or until the edges of the custards are set but the center is still slightly jiggly.

  9. Remove the ramekins from the water bath and let them cool to room temperature.

  10. Refrigerate for at least 2 hours or overnight.

  11. Just before serving, sprinkle a thin layer of erythritol over the top of each custard.

  12. Using a kitchen torch, caramelize the erythritol until it forms a golden-brown crust.

  13. Allow the caramelized sugar to harden for a few minutes before serving.
