Ingredients

  • 2 heads of garlic
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cut the tops off the garlic heads, exposing the cloves. Place them on a baking sheet and drizzle with olive oil. Wrap in foil and roast for about 45 minutes, until the garlic is soft and golden.

  3. In a large pot, heat some olive oil over medium heat. Add the diced onion and sauté until translucent.

  4. Squeeze the roasted garlic cloves out of their skins and add them to the pot. Stir well to combine.

  5. Pour in the vegetable broth and bring to a boil. Reduce the heat and let simmer for about 15 minutes.

  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  7. Stir in the heavy cream and season with salt and pepper to taste. Heat the soup for another 5 minutes, until warmed through.

  8. Serve the roasted garlic soup hot, garnished with fresh parsley.
