  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • for the orange sugar drizzle:
  • 1/2 cup powdered sugar
  • 1 tbsp fresh orange juice
  • 1 tsp orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined.

  4. Gently fold in the fresh raspberries.

  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. While the cupcakes are baking, prepare the orange sugar drizzle. In a small bowl, whisk together the powdered sugar, fresh orange juice, and orange zest until smooth.

  8. Once the cupcakes are done baking, remove them from the oven and let them cool for a few minutes before transferring them to a wire rack.

  9. Drizzle the orange sugar mixture over the warm cupcakes.

  10. Allow the cupcakes to cool completely before serving.
