How To Make Gluten Free Peanut Butter Cupcakes

Deliciously moist cupcakes made with peanut butter and gluten-free flour.

Ingredients

  • 1/2 cup gluten-free flour
  • 1/2 cup light brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup creamy peanut butter
  • 1/4 cup vegetable oil
  • 1/2 cup unsweetened almond milk
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. In a bowl, mix flour, brown sugar, baking powder, and baking soda.

  3. Add peanut butter, oil, almond milk, egg, and vanilla extract. Mix well.

  4. Pour batter into muffin cups, filling them about 2/3 full.

  5. Bake for 18-20 minutes or until toothpick comes out clean.

  6. Cool before frosting.
