- 1/2 cup gluten-free flour
- 1/2 cup light brown sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup creamy peanut butter
- 1/4 cup vegetable oil
- 1/2 cup unsweetened almond milk
- 1 egg
- 1 tsp vanilla extract
Instructions

Preheat oven to 350°F.

In a bowl, mix flour, brown sugar, baking powder, and baking soda.

Add peanut butter, oil, almond milk, egg, and vanilla extract. Mix well.

Pour batter into muffin cups, filling them about 2/3 full.

Bake for 18-20 minutes or until toothpick comes out clean.
