  • 12 oz. whole wheat pasta
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 cup kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp. olive oil
  • 1 tbsp. red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and place in a large serving bowl.

  2. Add cherry tomatoes, red onion, kalamata olives, and fresh parsley to the serving bowl, toss to combine.

  3. In a small mixing bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Pour over pasta mixture and toss until well combined.
