How To Make Vegetarian Grilled Eggplant Parmesan Recipe
A wholesome, meatless version of the classic Italian dish with grilled eggplant and a rich tomato sauce.

Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1 jar (24 oz) tomato sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions

Preheat grill to medium-high heat.

Brush eggplant slices with olive oil and sprinkle with salt and pepper.

Grill eggplant slices for 3-4 minutes on each side, or until tender and charred.

Meanwhile, combine breadcrumbs, Parmesan cheese, and garlic powder in a bowl.

Preheat oven to 375°F.

Spread 1/2 cup tomato sauce in the bottom of a 9×13 inch baking dish.

Layer grilled eggplant slices on top of the sauce.

Sprinkle breadcrumb mixture over the eggplant.

Top with remaining tomato sauce and shredded mozzarella cheese.

Bake for 20-25 minutes, or until cheese is melted and bubbly.

Garnish with fresh basil leaves before serving.
