How To Make Vegetarian Grilled Eggplant Parmesan Recipe

A wholesome, meatless version of the classic Italian dish with grilled eggplant and a rich tomato sauce.

Ingredients

  • 2 large eggplants, sliced into 1/2 inch rounds
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1 jar (24 oz) tomato sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat grill to medium-high heat.

  2. Brush eggplant slices with olive oil and sprinkle with salt and pepper.

  3. Grill eggplant slices for 3-4 minutes on each side, or until tender and charred.

  4. Meanwhile, combine breadcrumbs, Parmesan cheese, and garlic powder in a bowl.

  5. Preheat oven to 375°F.

  6. Spread 1/2 cup tomato sauce in the bottom of a 9×13 inch baking dish.

  7. Layer grilled eggplant slices on top of the sauce.

  8. Sprinkle breadcrumb mixture over the eggplant.

  9. Top with remaining tomato sauce and shredded mozzarella cheese.

  10. Bake for 20-25 minutes, or until cheese is melted and bubbly.

  11. Garnish with fresh basil leaves before serving.
