This healthy Fennel and Apple Slaw Pork Burger is the perfect twist to your BBQ cookout.

Ingredients
2tspvegetable oil
2ground pork patties
2slicescheddar cheese
2sesame burger buns
salt and ground black pepperto taste
For Onion and Tomato Relish:
1cupred onionmedium
1cuptomatoesmedium
½cupbrown sugar
½cupbalsamic vinegar
½cupred wine
2tbspgrain mustard(seeded)
salt and ground black pepperto taste
1tbspvegetable oil
For Fennel and Apple Slaw:
½cupfennelthinly sliced
½cupred applethinly sliced
⅓cupcarrotthinly sliced
⅓cupiceberg lettucethinly sliced
½cupaioli
Instructions
In a small saucepan, add the red onion and tomatoes. Stir in often until wilted.
Add the seeded mustard, brown sugar, balsamic vinegar, and red wine.
Season with salt and ground black pepper then boil until liquid is almost reduced to ⅓.
Heat a grill pan and place the burger patties. Season it with salt and ground black pepper and cook until well done. Meanwhile, heat up the burger buns in the toaster.
Once done, place one slice of cheddar cheese on each patty and let it melt slightly before removing it from the pan. Set aside.
To Assemble:
Spread a spoon of aioli on each side of the burger buns. Place roughly 2 tablespoons of the onion and tomato relish on top then the pork patty with cheese.
To finish, add the slaw mixture and top with the other half of the bread with aioli spread. You can also secure it with a toothpick in the middle. Serve and enjoy!
