ground beef

yellow onion
(1pc), large, diced

garlic powder

tomato sauce

brown rice
cooked

chicken broth
1
cup
sour cream
2

mozzarella cheese
shredded & divided
3
tbsp
olive oil
Salt & ground black pepper
to taste
To serve:
Mixed vegetables
(corn kernels, green peas, & carrots), cooked to your preference
Instructions
Preheat your oven to 350 degrees F. While your oven warms up, grease a 9x13-inch baking dish.
Heat up oil over a large skillet then add & saute onions briefly.
Add the ground beef to the skillet and saute for roughly 7 minutes until the beef is well browned. Drain any excess oil.
Lower the heat to medium then mix in the rice, tomato sauce, broth, one cup of cheese, & garlic powder.
Stir the ingredients until they are well blended and simmer them for 3 minutes.
Season with salt & pepper to taste and adjust accordingly.
Transfer the mixture onto the prepared baking dish and bake it in the oven for 15 minutes.
While waiting for the casserole to finish baking, combine the remaining 1 cup of mozzarella cheese and sour cream in a small mixing bowl.
After 15 minutes, spread the cheese mixture over the casserole and bake it for an additional 15 minutes.
Once your casserole is done baking, allow it to cool briefly then serve it with roughly 1 tablespoon mixed vegetables.
