Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 1 can water chestnuts, drained and sliced
  • 1/4 cup red onion, chopped
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Salt and pepper to taste
  • 2 cups mixed greens

Instructions

  1. In a large bowl, mix together shrimp, water chestnuts, and red onion.

  2. In a small bowl, whisk mayonnaise, lemon juice, honey, salt, and pepper until smooth.

  3. Pour dressing over the shrimp mixture and toss to coat.

  4. Serve chilled over a bed of mixed greens.
