Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup cooked water chestnuts, chopped
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • Salt and black pepper to taste

Instructions

  1. Rinse the quinoa thoroughly and drain. Add it to the water and bring to a boil.

  2. Reduce heat, cover, and simmer until the quinoa is tender, for about 20 minutes.

  3. In a frying pan, heat the olive oil and sauté the onion, garlic, and bell pepper until soft and fragrant.

  4. Add the cooked water chestnuts, curry powder, ground cumin, and salt and black pepper to taste.

  5. Add the cooked quinoa to the frying pan and stir until well combined.

  6. Serve hot.
