How To Make Pumpkin No Bake Energy Bites
Start your day right with chunky and delicious energy bites made from pumpkins, oatmeal, and chia seeds. It’s rich in flavor and texture and it’s filling!

Ingredients
- 8ozchopped dates
- ¼cuphoney
- ¼cuppumpkin puree
- 1tbspchia seeds,or flax seeds
- 1tspground cinnamon
- ½tspground ginger
- ¼tspground nutmeg
- pinch of salt
- 1cupold-fashioned oats,dry, not cooked
- 1cuptoasted coconut flakes
- 1cuptoasted pepitas,pumpkin seeds
Instructions

Combine the dates, honey, pumpkin puree, chia seeds, cinnamon, ginger, nutmeg, and salt in a food processor, and pulse until smooth and combined.

Transfer the mixture to a large bowl, and stir in the oats, coconut flakes and pepitas until evenly combined. Cover and refrigerate for at least 30 minutes.

Once the mixture is cool, use a spoon or cookie scoop to shape it into your desired size of energy balls. Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut it into bars.

Store covered in the refrigerator for up to 2 weeks.
