These tasty enchilada-inspired stuffed shells are assembled using jumbo shells filled with bell peppers, ground beef, enchilada sauce, cheese, and more!

Ingredients

  • 2tspoil
  • ½cuponion,diced
  • 2clovesgarlic,minced
  • cupred bell pepper,diced
  • cupgreen bell pepper,diced
  • cupyellow bell pepper,diced
  • 1lbbeef,ground
  • 1tbsptaco seasoning
  • 1lbjumbo shell,cooked
  • 1cupenchilada sauce
  • 1cupMexican blend cheese

Instructions

  1. Preheat the oven to 350 degrees F.

  2. In a skillet, heat the oil over medium-high heat. Cook the onions, garlic, and peppers until translucent.

  3. Add the ground beef and taco seasoning, and cook until browned.

  4. Fill the cooked shells with beef and place in a baking dish.

  5. Pour the enchilada sauce over the stuffed shells, and cover with cheese.

  6. Bake for 15 minutes or until the cheese is browned.

  7. Enjoy!
