This spicy Chiles En Vinagre is the best pickled side to pair with nachos, pizza, and sandwiches. The peppercorns are sweet with the right amount of heat!

  • 3bay leaves
  • ½tspblack peppercorn
  • ½tspMexican oregano
  • grapeseed,over heat
  • 8black peppercorns
  • 4clovesgarlic
  • 1onion,sliced
  • jalapeño
  • carrot
  • cauliflower,(optional)
  • water
  • apple cider vinegar
  • white vinegar
  • salt,to taste


  1. Put oil in pan. Add garlic, bay leaf, peppercorn, Mexican oregano, and cumin seeds. Saute briefly.

  2. Add sliced jalapeños and slide carrots. Sauté some more.

  3. Add water, apple cider vinegar, white vinegar, and salt.

  4. Let it boil for a couple of minutes and then transfer to a jar.

  5. Serve along with pizza, nachos, or sandwiches, and enjoy!
