How To Make Roasted Garlic Mashed Potatoes
Level up your sides with this creamy roasted garlic mashed potatoes dish! It's rich, savory, and made with just a handful of ingredients.
Ingredients
- 2 garlic heads, medium
- 2 tsp olive oil
- 2½ lb red potatoes, unpeeled, diced into quarters (or sixths if larger)
- salt and freshly ground black pepper
- ½ cup milk, (anything but skim)
- ¼ cup heavy cream
- ¼ cup butter, diced into 1 tbsp pieces, plus more for serving
- fresh parsley, chopped, for garnish (optional)
Instructions

Preheat oven to 400 degrees F.

Cut the garlic heads about ½-inch from the top to expose the cloves. Transfer the garlic heads to a sheet of foil, drizzle with 1 teaspoon of oil over each head, then wrap foil tightly around garlic so it's fully covered.

Roast in preheated oven for about 40 to 45 minutes until lightly golden and cloves are soft.

Remove from oven and let cool, then press and pinch cloves out of peels into a small bowl. Mash cloves with a fork and set aside.

Place the potatoes in a large enameled cast iron pot and add enough cold water to cover potatoes, then sprinkle in 1 tablespoon of salt.

Bring water to a boil over medium-high heat, then cover with lid. Reduce the heat to medium-low and allow to boil for about 20 minutes, until the potatoes are very tender when pierced with a fork.

Near the end of potatoes cooking, measure out milk in a liquid measuring cup, then add the cream and butter. Heat in the microwave for 45 to 60 seconds until hot.

Drain the potatoes, then return to the pot. Mash with a potato masher, with some lumps left.

Add the hot milk mixture and mashed roasted garlic, then stir with a spoon while seasoning with salt and pepper to taste.

Serve immediately with more butter and garnish with parsley, if desired. Enjoy!
