How To Make Diane’s Colcannon Recipe

Ingredients

  • 4 large potatoes, peeled and cubed
  • 4 cups cabbage, shredded
  • 1 onion, diced
  • 4 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.

  2. In a separate pot, cook the cabbage and onion in boiling water until tender, about 8-10 minutes. Drain and set aside.

  3. In a large mixing bowl, combine the cooked potatoes, cabbage, and onion. Mash together until well combined.

  4. Add the butter and milk to the potato mixture and continue to mash until smooth and creamy. Season with salt and pepper to taste.

  5. Serve hot as a side dish.
