How To Make Rainbow Salsa

Our refreshing salsa recipe makes the perfect dip for your favorite chips! It’s filled with crunchy bell peppers, beans, and more for a hearty dip.

Ingredients

  • 3Roma tomatoescored and diced
  • 2jalapeno peppersstems removed, seeded and diced, add to taste
  • 1large red bell peppercored and diced
  • 1large orange bell peppercored and diced
  • 1large yellow bell peppercored and diced
  • 15ozblack beans1 can, drained and rinsed
  • 15ozwhole kernel corn1 can, drained
  • 1cupfresh cilantrochopped, loosely-packed
  • cupred onionchopped, about half of a small red onion
  • 2tbsplime juicefreshly-squeezed, about 1 large lime
  • ½tspgarlic powder
  • ½tspground cumin
  • ½tspsalt
  • Garden of Eatin tortilla chips1 small bag, or any chips of choice

Instructions

  1. Combine the tomatoes, jalapeno, bell peppers, black beans, corn, cilantro and red onion in a large bowl.

  2. In a separate bowl, whisk together the lime juice, garlic powder, cumin and salt until combined.

  3. Add the lime juice to the bowl of salsa.

  4. Toss everything until combined.

  5. Serve immediately with tortilla chips, and enjoy!
