Ingredients
- ½cupextra-virgin olive oil
- ½cuplemon juice
- ¼cupfresh mint leaves,(spearmint), half of a ⅔ or ¾-oz package
- 3tbsphoney,or maple syrup
- 1tbspdijon mustard
- 2garlic cloves,roughly chopped
- ¼tspfine sea salt
- freshly ground black pepper,10 twists
Instructions

In a food processor, combine the olive oil, lemon juice, mint, honey, mustard, garlic, salt, and pepper, then blend until smooth. Taste, and add more salt and/or pepper, if necessary.
