How To Make Creole Sauce

This creole sauce or red gravy gives your usual dish a pleasing kick! It combines tomatoes, celery, & green bell pepper for a rich condiment.

Ingredients

  • 2 tbsp olive oil
  • 1 cup onions , diced
  • ½ cup celery, diced
  • ½ cup green bell pepper, diced
  • 1 tbsp garlic, minced
  • 14 oz tomatoes, (1 can) diced
  • 2 cups low-sodium chicken stock, store-bought or homemade
  • 1 tbsp louisiana-style hot sauce , such as Frank's or Crystal, plus more to taste
  • 1 tbsp worcestershire sauce
  • 2 bay leaves
  • ¼ tsp ground white pepper
  • ¼ tsp cayenne pepper
  • ½ tsp dried thyme leaves
  • 4 tbsp butter
  • 2 tbsp fresh parsley leaves, finely chopped
  • ½ cup green onions, thinly sliced
  • kosher salt and freshly ground black pepper, to taste

Instructions

  1. Heat oil in a large saucepan over medium-high heat until shimmering. Add onions, celery, and green peppers and cook, stirring occasionally, for 3 to 5 minutes until vegetables start to soften. Stir in garlic and cook for 30 seconds until fragrant.

  2. Stir in tomatoes, stock, hot sauce, Worcestershire sauce, bay leaves, white pepper, cayenne pepper, and thyme. Bring to a boil, then reduce heat to low. Simmer for about 20 minutes until sauce slightly thickens.

  3. Remove and discard bay leaves. Add butter and stir until completely melted. Remove from heat and stir in parsley and green onions. Season with salt, pepper, and additional hot sauce to taste.

  4. Serve and enjoy.
