Thus we’ve decided to recreate their iconic 3-cheese queso dip for its velvety smooth consistency and smoky and spicy flavor.

In our Qdoba queso recipe, we’ll be using American cheese, Monterey Jack, and cheddar cheese. In addition, we’re mixing in some poblano peppers as well to give our queso dip a smoky flavor. The result is a smooth and viscous cheese that doesn’t clump and harden over time. Another thing is we’re making it in a crockpot so it’s made easier for you to recreate it at home!

Ingredients

  • 1 cup Monterey Jack cheese, or pepper jack cheese, grated
  • 1 cup emmantal cheese, or gruyere cheese, grated
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream
  • 8 oz tomatoes, deseeded and chopped
  • ½ oz chili peppers, preferably poblano’s, roasted, deseeded, and chopped
  • tsp garlic powder
  • salt and ground black pepper, to taste

To Serve:

  • tortilla chips, or nacho chips

Instructions

  1. Combine all ingredients into your saucepot. Stir to combine.
  2. Stir occasionally over medium heat for at least 15 minutes until the cheese is melted.
  3. Adjust seasoning with salt and pepper.
  4. Serve while hot along with tortilla or nacho chips. Enjoy!
