For Dressing:
- ⅓cupextra-virgin olive oil
- ⅓cuprice vinegar
- 2large carrots,about ⅔ cup, peeled and roughly chopped
- 2tbspfresh ginger,peeled and roughly chopped
- 2tbsplime juice
- 1tbsphoney,plus 1 teaspoon
- 1½tspsesame oil,toasted
- ¼tspsalt,more to taste

In a blender, combine all of the salad dressing ingredients. Blend until completely smooth.

Taste and add salt to desired taste. If it’s too sour, blend in a bit more honey.

Serve over greens and any other ingredients you’d like.
