Ingredients

For Dressing:

  • cupextra-virgin olive oil
  • cuprice vinegar
  • 2large carrots,about ⅔ cup, peeled and roughly chopped
  • 2tbspfresh ginger,peeled and roughly chopped
  • 2tbsplime juice
  • 1tbsphoney,plus 1 teaspoon
  • tspsesame oil,toasted
  • ¼tspsalt,more to taste

Instructions

  1. In a blender, combine all of the salad dressing ingredients. Blend until completely smooth.

  2. Taste and add salt to desired taste. If it’s too sour, blend in a bit more honey.

  3. Serve over greens and any other ingredients you’d like.
