Ingredients

  • 2cupspapaya,chopped
  • 1medium red onion
  • ½cupcilantro,chopped
  • ¼cuplime juice,fresh
  • ¼cupcider vinegar
  • 1jalapeno chili
  • 2tspkosher salt
  • 1tspfreshly ground pepper
  • 2cupbanana,firm and slightly under ripe, chopped

Instructions

  1. In a bowl, combine the papaya, onion, cilantro, lime juice, cider vinegar, salt, and pepper.

  2. Cover and refrigerate until ready to serve.

  3. Add the banana, serve, and enjoy!

Cucumber-Jicama Salsa Variation: Replace banana and papaya with 2 cups of chopped seedless cucumber and 2 cups of chopped jicama.
