How To Make Summer Vegetable Sliders Recipe
These delicious sliders are packed with fresh summer vegetables and perfect for a light meal or snack.

Ingredients
- 8 slider buns
- 1 zucchini, sliced lengthwise
- 1 yellow squash, sliced lengthwise
- 1 red bell pepper, sliced
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
- 4 oz goat cheese
- Arugula, for serving
Instructions

Preheat grill or grill pan to medium-high heat.

Brush vegetables with olive oil and season with salt and pepper.

Grill vegetables until lightly charred, about 3-4 minutes on each side.

Meanwhile, whisk together balsamic vinegar and honey to make the dressing.

Toast the slider buns.

Assemble the sliders by spreading goat cheese on the bottom bun.
