How To Make Vegan Easter Lemon Bars Recipe

Ingredients
- 1/2 cup vegan butter, softened
- 1/4 cup powdered sugar
- 1 cup flour
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1/2 cup fresh lemon juice
- 2 tbsp lemon zest
- Powdered sugar, for garnish

Preheat oven to 350°F.

Grease a 8×8 inch baking dish.

In a bowl, mix together vegan butter, powdered sugar, and flour. Press dough into the baking dish.

Bake for 15-20 minutes, until lightly golden. Let cool.

In a separate bowl, whisk together sugar, cornstarch, and salt. Whisk in lemon juice and zest.
