Ingredients

  • 1/2 cup vegan butter, softened
  • 1/4 cup powdered sugar
  • 1 cup flour
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1/2 cup fresh lemon juice
  • 2 tbsp lemon zest
  • Powdered sugar, for garnish

Instructions

  1. Preheat oven to 350°F.

  2. Grease a 8×8 inch baking dish.

  3. In a bowl, mix together vegan butter, powdered sugar, and flour. Press dough into the baking dish.

  4. Bake for 15-20 minutes, until lightly golden. Let cool.

  5. In a separate bowl, whisk together sugar, cornstarch, and salt. Whisk in lemon juice and zest.

  6. Pour mixture onto crust. Bake for 20-25 minutes, or until filling is set.

  7. Let cool, then refrigerate. Cut into squares and dust with powdered sugar before serving.
