  • 4 large potatoes, diced
  • 1 can of salmon
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.

  2. Add diced potatoes and cook until golden brown, about 10-12 minutes, stirring occasionally.

  3. Add the onion, red bell pepper, garlic, and paprika. Cook until vegetables are tender, about 5-7 minutes.

  4. Drain canned salmon and flake it into the skillet with the potatoes and vegetables. Cook until heated through, about 3-4 minutes.

  5. Season with salt and pepper to taste. Top with fresh parsley (optional) and serve hot.
