Serves:
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (optional)
Instructions
-
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a bowl, whisk together the flour, baking powder, and salt.
-
In a separate bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the flour mixture to the butter mixture, mixing until just combined. Stir in the nuts and dried fruit, if desired.
-
Divide the dough in half. Shape each half into a log about 12 inches long and 1 1/2 inches wide. Place the logs onto the prepared baking sheet, spacing them a few inches apart.
-
Bake for 25-30 minutes, or until the logs are lightly golden brown and firm to the touch. Remove from the oven and let cool for 15 minutes.
-
Reduce the oven temperature to 325°F (165°C). Carefully transfer the logs to a cutting board and slice them diagonally into 1/2 inch thick slices.
-
Place the slices back onto the baking sheet, cut side down. Bake for an additional 10-15 minutes, or until the biscotti are golden brown and crisp. Remove from the oven and let cool completely before serving.
