Preparation: 20 minutes
Cooking: 40 minutes
Total: 1 hour

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup dried fruit (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together the flour, baking powder, and salt.

  3. In a separate bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the flour mixture to the butter mixture, mixing until just combined. Stir in the nuts and dried fruit, if desired.

  5. Divide the dough in half. Shape each half into a log about 12 inches long and 1 1/2 inches wide. Place the logs onto the prepared baking sheet, spacing them a few inches apart.

  6. Bake for 25-30 minutes, or until the logs are lightly golden brown and firm to the touch. Remove from the oven and let cool for 15 minutes.

  7. Reduce the oven temperature to 325°F (165°C). Carefully transfer the logs to a cutting board and slice them diagonally into 1/2 inch thick slices.

  8. Place the slices back onto the baking sheet, cut side down. Bake for an additional 10-15 minutes, or until the biscotti are golden brown and crisp. Remove from the oven and let cool completely before serving.
